Beef Potjiekos

An ‘all-in-one’ hearty pot to serve hot with rice or crusty bread next to the braai.

  1. Season meat in half of the spice and add to the pot. Brown all sides of the meat well.
  2. Sauté onions, garlic and the bay leaves. Add remaining spice and herbs then add tomatoes and chutney.
  3. Pour in the beer/stock, soup powder and water. Put the lid on and gently simmer for approximately 2 hours.
  4. Add the potatoes and cook for about 30 minutes before adding the carrots, marrows, and corn.
  5. Taste and add a bit more salt, black pepper, and chutney, if needed.

Don’t stir the pot, but gently shake to ensure that there is enough liquid in the bottom and that it’s not burning. If unsure, add a bit more stock and simmer for another 15-20 minutes. Serve hot with rice or crusty bread.
